A growing appetite for pork is building momentum with consumers. Dr. Glynn Tonsor, an economist at Kansas State University, said the pork industry is turning appetites into action by making pork a favorite every day. One of the key shifts has been looking more closely at individual pork products, such as ham and loin, and making demand a greater priority throughout the industry.
Because of this shift, the tide may be turning, with more attention being placed on the different levels of consumer demand. Tonsor specifically tracks consumer sentiment, price changes and sensitivity, and purchasing behavior for pork and other proteins.
Long-term demand is essential to the success of pork producers. Tonsor said his role is to connect the broader demand signals with what is ultimately reflected at the wholesale level.
